
Ingredient:
1. Lamb briskets- 700g
2. Spring onion - 2 stalks
3. Chinese leeks - 1 stalks
4. Ginger - 10g
5. Bamboo shoot
6. Eggs - 5
7. Oyster sauce - 1 tbsp
8. Dark soy sauce - half tbsp
9. Fermented red beancurd - 3 tbsp
10. Chili bean sauce - 2 tbsp
11. Chinese cooking wine - 1 tbsp
12. Black pepper - 3 tbsp
13. Rock sugar - 20g
14. Water - 300ml
Instruction:
1. Boil a pot of water and add bamboo shoots into boiling water for 3 minutes.
2. Boil another pot of water, add ginger, spring onion, black pepper and lamb brisket blanch in boiling water for 8 minutes.
3. In a hot pan with oil, stir fry ginger and spring onion until fragrant, add lamb brisket, fermented red beancurd, chilli bean paste, oyster sauce, water, dark soy sauce, rock sugar and egg. Low heat and cook for 90 minutes.
4. Add bamboo shoot and chinese leeks, let it cook for 20 minutes.
5. Add chinese cooking wine before serve.
材料:
1. 羊腩 700克
2. 蔥 2根
3. 京蔥 1根
4. 薑 10g
5. 竹筍 適量
6. 雞蛋 5顆
7. 蠔油 1湯匙
8. 黑醬油 半湯匙
9. 南乳 3湯匙
10. 辣豆瓣醬 2湯匙
11. 紹興酒 1湯匙
12. 黑胡椒 3湯匙
13. 冰糖 20克
14. 水 300毫升
步驟:
1. 準備一鍋熱水川燙竹筍3分鐘。瀝乾備用
2. 準備另鍋熱水,加入少許薑片,青蔥,黑胡椒和羊腩川燙8分鐘
3. 燒熱油鍋,放入大量薑蔥炒出香氣,加入羊腩,南乳,辣豆瓣醬,蠔油,水,黑醬油,冰糖和雞蛋小火燉煮90分鐘
4. 加入竹筍和京蔥繼續燉煮20分鐘
5. 上桌前加入紹興酒熄火即可
