Thai Glass Noodle Salad (Yum Woon Sen) | 泰式冬粉沙拉





Ingredient:

1. Shrimps - 6
2. Glass noodle - 50g
3. Minced chicken - 30g
4. Dried shrimps - 20g
5.  Spring onion - 2 stalks
6. Red onion - 3 
7. Thai chillies - 4
8. Cherry tomato - 5
9. Fish sauce - 3 tbsp
10. Lemon juice - 3 tbsp
11. Melted sugar - 1 tbsp

  1. Soak dried glass noodles in cold water for 10 minutes, and let them soften in boiled water for a few minutes, then remove and rinse with cold water.
  2. Stir fried shrimps 3-4 minutes until they turn pink, remove and set aside. 
  3. Stir fried red onion slices and dried shrimps until fragrant, next pop  in the chopped chicken and break up as you cook, lastly add in chopped thai chilli and stir fried for 3-4 minutes.
  4. Mix fish sauce, lemon just and melted sugar (adjust to preference).
  5. Sprinkle with spring onions, mix in meat, tomatoes and noodles coating with the dressing before you eat.                                                                                                                                 

材料:

1. 中虾 - 6隻
2. 冬粉 - 50克
3. 雞肉碎 - 30克
4. 蝦米 - 20克
5. 青蔥 - 2束
6. 紅蔥頭 - 3顆
7. 指天椒 - 4條
8. 小番茄 - 5粒
9. 魚露 - 3湯匙
10. 檸檬汁 - 3湯匙
11. 白砂糖 - 1湯匙 (煮至溶化)

1. 把冬粉浸在水裡10分鐘泡軟,然後放入熱水裡煮熟,接著泡在冷水裡可以保持彈性。
2. 把蝦子煎至粉紅色。
3. 接著爆香紅蔥頭和蝦米,香味出來後加入雞肉碎,煮熟後加入指天椒碎拌炒。
4. 把魚露,檸檬汁和糖水倒入碗裡攪拌。鹹度和酸度可以根據個人口味調整。
5. 把冬粉,雞肉碎,小番茄,蝦子和醬汁混合。最後撒上大量青蔥即可。


*吃之前才淋上醬汁,不然汁都被冬粉吸乾。
